Ingredients for 1 servings:
- 100 g whole wheat flour
- 60 ml water
- ½ tbsp olive oil
- 4 tbsp tomato sauce, spicy, possibly with Pecorino
- 30 g cheese (goat cheese), in thin slices
- 6 cocktail tomatoes
- 2 handfuls of arugula
- Chili powder, if desired
- oregano
- Flour for the work surface

For the dough, put flour, water, and olive oil in a mixing bowl and mix until you have a smooth dough. The dough should no longer stick, otherwise you will need to add more flour. The dough can also be made with regular wheat flour if you don’t like wholemeal flour. Wrap in cling film and let it rest in the refrigerator for at least half an hour. Preheat the oven to 250°C. Roll out the dough thinly with a rolling pin on a floured surface, then stretch it out further in the air with your hands until the dough is wafer-thin. Place it on the baking tray and spread with the tomato sauce. Top with tomatoes and goat cheese. Season with oregano and chili to taste. Bake for approx. 12 minutes, until the cheese is melted and lightly browned. Finally, sprinkle the pizza with arugula.
