Ingredients for 1 servings:
- 4 banana(s), ripe
- 3 eggs
- 300 g wholemeal flour (e.g. wheat or buckwheat flour)
- 1 packet of baking powder
- 200 g Skyr
- 100 g almond flakes
- 3 tbsp honey
- 2 tbsp oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
Mash the ripe bananas with a fork or a mixer until smooth. Add the eggs and mix. Mix the baking powder with the flour and fold in alternately with the skyr. The batter should not be too runny. Fold in the flaked almonds. Optionally, add honey and/or oil, but it’s not necessary. Cinnamon also tastes good. Pour the batter into a prepared loaf pan or other baking dish. Bake in a preheated oven at 180°C (top/bottom heat) for about 50 minutes on the middle rack.
