Healthy waffles with spelt flour

Ingredients for 4 servings:

  • 2 eggs
  • 30 g butter
  • 40 g coconut blossom sugar (or other sugar)
  • 100 g spelt flour type 1050
  • 1 tbsp yogurt
  • 150 ml milk
  • 1 pinch of salt
  • 1 pinch(s) of baking powder
  • e.g. cinnamon
  • e.g. vanilla
  • Fat for the waffle iron

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

low-fat, reduced sugar – great taste

Beat the butter with sugar and a pinch of salt until fluffy. Add the eggs, one at a time, and beat each egg in for about half a minute until creamy. Mix the flour with the baking powder. Stir into the batter along with the yogurt and milk until no lumps remain. If desired, refine the batter with cinnamon or vanilla. Bake the batter in batches in a greased waffle iron and enjoy warm. Tastes best with fresh fruit.
