Ingredients for 4 servings:
- 2 cans of palm hearts, 220 g each, drained and sliced
- 2 tomatoes, pitted, in pieces
- 1 onion(s), red, cut into strips
- 1 tsp, heaped ginger, freshly grated
- 1 bunch coriander greens, chopped
- 4 stalks of chives, finely chopped
- 1 chili pepper(s), red, chopped, possibly pitted
- 3 tbsp olive oil
- 1 tbsp vinegar (sherry vinegar)
- 1 tbsp water
- n. B. Salt
- 1 tsp palm sugar
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Refreshing starter or side dish
Whisk together oil, vinegar, water, salt, ginger, and chili until smooth. Combine the palm hearts, tomatoes, and onions in a salad bowl with the dressing, stir in the coriander, and sprinkle with chives. Serve fresh as an appetizer or with grilled fish.
