  • 1 onion(s)
  • 2 cloves garlic
  • 1 bacon (belly bacon), thick slice
  • Thyme, juniper berries, bay leaf
  • some wine, red
  • 250 ml beef broth
  • Flour and milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heart of beef, venison or deer suitable

Halve the heart and stud it with strips of bacon. Sauté the onion, add the garlic slices, and briefly fry the heart. Add the spices and deglaze with red wine. Pour in the beef broth and simmer for half an hour. Dust the sauce with the milk and flour mixture and let it reduce briefly. Bread dumplings, potato dumplings, or spaetzle go very well with this dish. If you like, you can also add finely chopped pickles and/or root vegetables.
