Viennese potato goulash

Ingredients for 4 servings:

  • 1 kg potato(s), (preferably waxy)
  • 4 sausages (preferably Debreciner, Wiener also works)
  • 1 onion(s)
  • 2 tbsp paprika powder, sweet
  • oil

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Dice the onion and potatoes. Sauté the onions in oil, stir in the paprika, and immediately deglaze with a little water. Add the potatoes, fill with water so that they are just covered, and season with salt. When the potatoes are cooked, add the chopped sausages. Season with more paprika and salt, if desired. The potatoes should have absorbed most of the water by now; the mixture should still be slightly moist, and the potatoes should be slightly mushy.
