Hearts of palm in vinaigrette

Ingredients for 2 servings:

  • 1 can of palm hearts
  • 1 ½ tbsp vinegar (red wine vinegar)
  • 5 tbsp olive oil
  • 1 tsp honey
  • 1 tbsp mustard (Dijon mustard)
  • salt and pepper
  • 2 spring onions

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Appetizer from the Seychelles

Make a vinaigrette with oil, vinegar, mustard, honey, salt, and pepper. Wash the spring onions, halve them lengthwise, and chop them very finely. Add them to the vinaigrette and heat briefly (on the stovetop or in the microwave) to eliminate the oniony aftertaste. Wash the hearts of palm thoroughly and slice them, tossing them with the vinaigrette and letting them infuse well.
