Hearty carrot sheet cake

Ingredients for 1 servings:

  • 750 g carrot(s)
  • 1 large onion(s)
  • 300 g cheese, savory variety
  • 300 g flour
  • 3 m.-sized eggs
  • 400 ml milk, or milk-cream mixture
  • 5 tbsp olive oil
  • salt and pepper
  • nutmeg
  • Vegetable broth, granulated
  • Parsley
  • 1 packet of baking powder

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

when you have too many carrots that need to be used up

Wash the carrots and trim off any bad bits (I didn’t peel them!). Peel the onion. Grate both and the cheese using the coarse blade of a food processor and transfer to a large bowl. Whisk together the flour, baking powder, eggs, milk, oil, spices, and herbs and mix with the carrots. If it’s too dry, feel free to add up to 100 ml more milk. The amount of spices depends on the cheese—i.e., how hearty it is. Spread the mixture onto a baking sheet lined with baking paper and bake at 180°C (fan oven) for about 50 minutes. We like it best lukewarm.
