Hearty green bean pan

Ingredients for 2 servings:

  • 500 g beans (stalks)
  • 1 large potato(s)
  • 1 large onion(s), red
  • 2 tbsp butter
  • 1 tsp Sambal Oelek, or 1 fresh small chili
  • salt and pepper
  • Spice mix for fried potatoes

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Ideal for vegetarians

Bring a pot of water to a boil and add salt. Wash the potatoes and cut them into medium-sized pieces, then add them to the pot. Then clean, wash, and finely chop the beans, and add them to the pot. Cook the potatoes for 20-30 minutes, and the beans for 15-20 minutes. In the meantime, clean and slice the onion, melt the butter in a large pan, and add the onion. When the potatoes are fork-tender and the beans are tender, drain the water and add both to the pan with the onion. Season well with salt, pepper, and 1 teaspoon of sambal oelek or a small, fresh chili. The special highlight of this recipe is the fried potato seasoning with fried onions; add about 2-3 tablespoons. Other ingredients if you don’t have it on hand: fried onions, parsley, pepper, onion, and caraway. Bacon would also go very well with this dish, but I prefer not to use it; it tastes incredibly delicious and hearty as it is.
