Ingredients for 1 servings:
- 500 g flour, wheat 550 (better 1050)
- 1 tsp salt, level
- 1 bag(s) of yeast, dry yeast (or half a cube of fresh yeast)
- 1 tsp oregano
- 1 tbsp applesauce
- 250 ml water, lukewarm
- 100 g ham, raw, diced
- 1 large onion(s), chopped
- 100 g cheese, grated (e.g. Emmental)
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Mix the flour with the dry yeast, oregano, and salt. Then add the water and applesauce and knead until an elastic dough forms. Now mix the ham, grated cheese, and chopped onion and work them into the dough. Cover and let rest for about 30 minutes, then shape into a loaf, place on a baking sheet, and let rise in a warm place for another 30 minutes. Preheat the oven to 250 degrees Celsius (top/bottom heat), score the bread, spray with water, and place it in the oven. After about 10 minutes, reduce the heat to 200 degrees Celsius, then after about 10 minutes, reduce the heat to 180 degrees Celsius. After about 60 minutes, the bread is ready (tap the bread to test it!). The applesauce doesn’t taste sweet; it simply gives the bread a very airy texture and makes the crumb soft and elastic. Variations: Instead of oregano, you can also use herbs de Provence. For example, you can add herbs such as thyme, thyme leaves, oregano, oregano powder. For example, you can replace 100 g of flour with rye 997 and then replace the water with buttermilk, which will give an even more “rustic” taste.
