Hearty pork stew with root vegetables

Ingredients for 5 servings:

  • 1 tbsp clarified butter
  • 1,000 g pork goulash
  • 1 vegetable onion(s)
  • 1 garlic clove(s), chopped
  • 1 shot of white wine
  • 2 carrots, thinly sliced
  • 3 parsley roots, thinly sliced
  • 3 potatoes, diced
  • 750 ml vegetable stock, seasoned
  • 1 tbsp parsley, fresh or frozen, chopped
  • 2 tbsp flour, approx.
  • salt and pepper
  • Fresh parsley (garnish)

Working time approx. 25 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 25 minutes

a recipe for the crockpot / slow cooker

This recipe is designed for a 3.5L crockpot (CP). First, briefly brown the pork goulash in hot clarified butter. Then stir in the onion, followed shortly after by the garlic. Deglaze with a little white wine. Then add the remaining vegetables and sauté for a few minutes. Place everything in the CP, sprinkle with parsley, and lightly season with salt and pepper. Finally, pour in the vegetable broth. Cover. Braising time: approx. 4-5 hours on high or 5-6 hours on medium. About 20 minutes before the end of the cooking time, stir the flour into a little broth from the pot until smooth and thicken the dish. Stir well. Season again to taste. To serve, sprinkle with fresh parsley and serve with white bread.
