Ingredients for 6 servings:
- 1 kg potatoes, peeled, washed, cut into small cubes
- 1 bunch of soup greens, washed and chopped
- 1 tsp meat broth (instant)
- 1 tsp vegetable broth (instant)
- 2 bay leaves
- 1 tsp allspice, whole
- e.g. marjoram
- Salt or Fondor
- pepper
- nutmeg
- 250 g mushrooms, fresh
- 100 g bacon, smoked belly bacon, cut into small cubes
- 2 large onions, chopped
- 1 jar Bockwurst
- e.g. parsley, chopped
- some oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Place the potatoes, vegetables, bay leaves, allspice, and spices in a large pot. Add about 1.5 liters of water. Cook until the vegetables are almost tender. Meanwhile, heat a little oil in a pan and fry the bacon until slightly crispy. Add the onions and mushrooms, fry for a few minutes, then add them to the soup and simmer for about another 10 minutes. Finally, add the sausage (sliced if desired) and parsley to the stew and let it simmer. Season to taste.
