Hearty Salami and Ham Quiche with Pepperoni and Three Kinds of Cheese

Ingredients
 

For the dough:

  • 100 g Wheat flour
  • 100 g Spelt flour
  • 1 Egg
  • 125 g Butter
  • 2 tbsp Water cold
  • 0,5 tsp Salt
  • 1 tsp Italian spice mix
  • 1 tsp Dried oregano
  • 6 Chopped sun-dried tomatoes, rest
  • 2,5 tbsp Danish fried onions, rest

For covering:

  • 50 g Smoked ham, rest
  • 1 Onion
  • 1 Clove of garlic
  • 1 tsp Vegetable oil
  • 6 Mild hot peppers glass
  • 1 Chilli red fresh
  • 0,5 Red peppers
  • 2 Spring onions fresh
  • 8 slices Salami, rest

For the cast:

  • 200 ml Cremefine for cooking
  • 150 g Creme légère
  • 3 Eggs
  • 50 g Gouda grated young, rest
  • 2 tbsp 8-herb mixture frozen
  • Salt, colored pepper from the mill
  • 1 tsp Red chilli flakes

For gratinating:

  • 100 g Diced cheese leftovers: Maasdammer, Gouda young, Gouda middle-aged

Aside from that:

  • Cling film
  • Some fat for the shape

Instructions
 

  • For the dough, quickly knead wheat flour, spelled flour, egg, butter, water, spices, oregano, dried tomatoes and roasted onions to form a smooth dough. Wrap in cling film and let rest in the refrigerator for at least half an hour.
  • In the meantime, finely dice the ham. Peel the onion and garlic and dice both finely. Heat the oil in a saucepan and fry everything until the onions are translucent. Set aside and let cool.
  • Drain the peppers. Rinse the chilli. Cut the pepperoni and chilli into thin rings. Wash and clean the peppers and spring onions. Divide the bell pepper into thin, short strips and the spring onions into thin rings. Dice the salami. Preheat the oven to 200 degrees.
  • For the topping, whisk together the cremefine, creme légère, eggs, herbs and cheese. Season well with salt, pepper and the chilli flakes.
  • Grease a quiche pan (approx. 26 cm). Roll out the dough thinly and place it in the mold, forming one edge. Prick several times with a fork.
  • First distribute the peppers, spring onions and chilli, then the salami and peppers evenly on the dough. Finally pour the onion and ham mixture over it. Pour in the egg mixture so that everything is covered. Finally sprinkle the cheese on top. Bake in the oven for about 45 minutes until the cheese is golden brown.
  • Let cool down a little and serve warm. Fits as a starter or as a main course. Have fun trying!
