Vegetable and Herb Quiche with Mushrooms and Pecorino Cheese

Ingredients
 

For the dough:

  • 200 g Flour
  • 1 Egg
  • 125 g Butter
  • 0,5 tsp Salt
  • 1 tsp Curry powder
  • 2 tbsp Water cold
  • 2 tsp Dried herbs of your choice, e.g. parsley, chives

For covering:

  • 6 Mushrooms brown
  • 0,5 Red pepper, rest
  • 2 Red onions
  • 1 Chilli red fresh, rest
  • 2 Garlic cloves
  • 3 Spring onions fresh
  • 5 slices Smoked pork sausage, rest
  • 0,5 tbsp Plant cream
  • Salt, colored pepper from the mill

For the cast:

  • 3 Eggs
  • 200 ml Cremefine for cooking
  • 150 g Crème légère
  • 2 tbsp Frozen chives
  • 2 tbsp Frozen parsley
  • 3 tbsp Pecorino finely grated, rest
  • 50 g Gouda finely grated young
  • Salt, colored pepper from the mill
  • 0,5 tsp Chili powder

aside from that:

  • 120 g Gouda finely grated young
  • 2 tsp Sesame seeds white
  • 1 26-cup quiche pan
  • Some butter for the pan

Instructions
 

  • Using the flour, egg, butter, water, salt, curry powder and herbs, quickly knead a dough. Shape the dough into a ball, wrap it in cling film and let it rest in the refrigerator for 30 minutes.
  • In the meantime, clean the mushrooms, cut in half and cut into thin slices. Wash, clean and dice the paprika and chilli. Peel the onions and garlic, cut the onions in half and cut into rings, finely chop the garlic. Heat the plant cream in a pan and sauté the vegetables in it for about 5 minutes, season with a little salt and pepper. Let cool down.
  • Preheat the oven to 200 degrees (top and bottom heat). Dice the smoked ham and clean the spring onions, then cut into rings. Finely grate the Gouda and Pecorino cheese. For the topping, whisk the eggs, cremefine, crème légère, pecorino and herbs together. Season well with the spices. Finally stir in 50 g of Gouda.
  • Butter the quiche form. Roll out the dough thinly, place it in the pan and form an edge. Spread the fried vegetables on top, then top with smoked pork and spring onion rings. Cover evenly with the glaze and sprinkle with the rest of the Gouda cheese. Finally, distribute the sesame seeds on top.
  • Bake in the oven for about 45 minutes until the cheese is golden brown. Serve lukewarm with a salad of your choice, as a main course or as a starter when guests come. Bon Appetit!
