Hearty sweet zucchini and carrot salad

Ingredients for 4 servings:

  • 4 m.-large zucchini
  • 4 m.-sized carrot(s)
  • 1 clove(s) garlic
  • 4 sage leaves
  • 1 small piece(s) of ginger
  • 2 tbsp honey
  • 2 pinches of salt
  • 4 tbsp olive oil
  • 1 half lemon(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

With ginger and sage

Peel and slice the carrots. Slice the zucchini. Dice the ginger very finely and cut the sage leaves into thin strips, about 2 cm wide. Heat the oil in a pan and fry the carrots for 7-8 minutes. Then add the zucchini, ginger, sage, and crushed garlic. Fry for another 3-4 minutes and season with salt and the juice of half a lemon. Now add the honey and toss everything for another 2-3 minutes. Ideal with grilled meat.
