Ingredients for 4 servings:

  • 200 g flour, type 405
  • 100 g butter
  • 125 g sugar
  • ½ tsp ammonium bicarbonate
  • 1 packet of vanilla sugar
  • ½ cup milk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Hartshorn salt serves as a raising agent (ammonium bicarbonate – E 503)

Brown the butter in a saucepan and then let it cool slightly. Then mix it well with the other ingredients, except for the milk. I recommend using a large bowl and a wooden spoon. Knead the dough thoroughly with your hands, carefully adding the milk until a cohesive ball of dough forms. Roll out the dough with a bottle and cut out cookies with a glass. Bake these on baking paper in a preheated oven (200°C, fan-assisted) for about 10 minutes. Then let them rest in the turned-off oven until they turn a golden brown.
