Ingredients for 4 servings:
- 1 kg potatoes
- 1 tsp salt
- 500 g apples
- ½ tsp sugar
- 1 tbsp lemon juice
- 100 g smoked bacon
- 100 g onion(s)
- 400 g black pudding
- 1 tbsp oil
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Wash and peel the potatoes and cut into cubes about 1 cm long. Bring to a boil, barely covered with salted water, and cook for about 15 minutes. Peel the apples, quarter them, removing the cores, then halve the quarters lengthwise again. Heat the apple slices in a saucepan with 50 ml of water along with the sugar and lemon juice, and sauté until cooked through. Finely dice the bacon and fry in a non-stick pan without adding any fat. Peel and finely dice the onions, add them to the bacon, and cook in the frying fat until translucent. Drain the potatoes and roughly mash them with a potato masher. Add the bacon and onion mixture and whisk thoroughly. Then add the apple slices. Season with salt. Slice the black pudding and fry in the remaining frying fat, adding another 1 tablespoon of oil if desired. Arrange the fried black pudding slices on top of the potato and apple mixture. Tip: Instead of black pudding you can also use Leberkäse.
