Ingredients for 4 servings:

  • 1 kg potatoes
  • Salt
  • 1 kg apples
  • ¼ liter apple juice
  • 1 lemon(s), juice
  • 2 packets of vanilla sugar
  • 3 onions
  • 1 tbsp oil
  • ¼ liter of milk
  • 50 g butter
  • Nutmeg, freshly grated
  • 2 tbsp breadcrumbs
  • 200 g black pudding, sliced
  • ½ bunch parsley
  • Fat for the mold

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash the potatoes thoroughly, peel them, wash them again, and cook them in boiling salted water for 25 minutes. Meanwhile, wash, peel, quarter, and core the apples. Dice the apples. Bring the apple juice, lemon juice, vanilla sugar, and diced apples to a boil and simmer for 10 minutes. Peel the onions and slice them into rings. Heat the oil in a pan and fry the onion rings until golden brown. Heat the milk with half the butter. Drain the potatoes, add the milk, and mash the potatoes with a potato masher until coarsely browned. Season with salt and nutmeg. Melt the remaining butter and stir in the breadcrumbs. Layer the mashed potatoes and apple compote in a greased baking dish. Place the black pudding on top, then scatter the breadcrumbs and onion rings on top. Bake in a preheated oven (top/bottom heat 200°C, gas mark 3) for 15 minutes. Wash the parsley, pat dry, and finely chop, reserving a little for garnish. Sprinkle the Heaven and Earth with chopped parsley and serve garnished.
