Mashed potatoes with bacon and pickles

Ingredients for 4 servings:

  • 1,000 g floury potatoes
  • Salt
  • 3 onions
  • 3 cucumber(s) , (pickles)
  • 150 g smoked bacon, streaky
  • ¼ liter buttermilk
  • 1 tbsp butter
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Side dish to fish or simple main course

Peel and quarter the potatoes, and cook in salted water for about 20 minutes. In the meantime, dice the peeled onions, bacon, and cucumber. Fry the bacon over low heat, add the diced onions, and sauté until translucent. Briefly sauté the cucumbers. Drain the potatoes, let them cool, and roughly mash them with a potato masher. Heat the buttermilk and melt the butter. Mix the bacon mixture, buttermilk, and melted butter into the potatoes. Season to taste with salt and pepper. Serve as a side dish with fish or as a simple main course with fried eggs and endive salad.
