Heavenly garlic dip

Ingredients for 4 servings:

  • 2 bulbs of garlic
  • 6 tbsp olive oil
  • 1 small onion(s), finely chopped
  • 2 tbsp lemon juice
  • 3 tbsp sesame paste (tahini)
  • 2 tbsp parsley, freshly chopped
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the garlic bulbs into individual cloves, then roast them on a baking sheet in a preheated oven at 200°C for 8-10 minutes. Set aside and let cool for a few minutes. Peel and finely chop the garlic cloves. Heat olive oil in a saucepan. Add the garlic and onion. Sauté over low heat, stirring occasionally, for 8-10 minutes, until softened. Remove the pan from the heat. Stir in the lemon juice, tahini, and parsley. Season with salt and pepper. Transfer to a small bowl. Serve with fresh, raw vegetables, flatbread, or baguette. Also great for grilling.
