Ingredients for 6 servings:
- 200 ml wheat flour
- 50 ml rye flour
- 75 ml sugar
- 1 ½ tsp baking powder
- 1 egg(s)
- 75 ml butter, melted
- 100 ml milk
- Fat for the mold
- 200 g berries (cranberries or other berries), frozen
- 200 ml cereal flakes (rye flakes) or whole-grain oat flakes
- 75 ml sugar
- 1 tsp vanilla sugar
- 50 ml butter, melted
- e.g. vanilla sauce, ready-made product or homemade
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Finnish berry cake
Combine the wheat and rye flour, sugar, and baking powder. Then, mix the egg, butter, and milk and add to the mixture. Spread the batter in a greased pan and arrange the berries on top. Mix the crumble ingredients and sprinkle the mixture over the berries. Bake at 200°C (top/bottom heat) on the lowest rack for about 25 minutes. Heat the ready-made vanilla sauce and pour it over the warm cake.
