Finnish sugar – cinnamon rings

Ingredients for 1 servings:

  • 1 kg flour, non-stick
  • ½ tsp cardamom, ground
  • 1 cube of yeast, fresh
  • 2 tsp salt
  • 200 g sugar
  • 1 egg(s)
  • 150 g butter
  • ½ liter milk, lukewarm
  • Butter, for spreading
  • Cinnamon, for sprinkling
  • Sugar, for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Pulla – makes about 20 pieces

First, whisk together 200g of granulated sugar with 1 egg. Mix everything together to form a yeast dough and let it rise at room temperature for about 10-20 minutes. Divide the yeast dough into 2 pieces and roll out like a pizza to a thickness of 1/2 cm. Tip: the dough should be rectangular, rather than round, so that it is easier to stack the dough on top of each other later. Gently warm 3-4 tablespoons of butter (it can also be slightly runny) and spread/brush generously onto the dough (like tomato sauce on a pizza) and sprinkle with plenty of granulated sugar and cinnamon. Fold the dough and cut into 2cm thick strips. Twist into spirals and shape into small yeast rings, place on baking paper and let rest for 10-15 minutes (preheat the oven in the meantime). Brush the rings with egg or water and bake at 200°C for about 15 minutes.
