Herb celery in wine marinade, Memleben style

Ingredients for 4 servings:

  • 1 large celeriac
  • 1 bunch of parsley
  • 0.2 liters of white wine
  • ½ lemon(s)
  • 6 tbsp oil
  • 1 tsp sugar
  • 1 tsp mustard
  • Salt
  • Worcestershire sauce
  • Glutamate

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 28 minutes

cold steamed vegetables

Thinly slice the peeled celery. Add it to a marinade of white wine, lemon juice, Worcestershire sauce, oil, salt, sugar, and a little MSG, if desired. Sauté for 8 minutes. Then stir in the finely chopped parsley. Season with mustard and let stand, covered, for about 1 hour. It goes wonderfully with sausage sandwiches or fried fish.
