Herb curd with nasturtiums

Ingredients for 4 servings:

  • 500 g quark, 40% fat
  • 250 g yogurt, 3.5% fat
  • 1 lime(s), untreated
  • 1 shallot(s)
  • 1 pinch of saffron
  • salt and pepper
  • 2 handfuls of nasturtium leaves
  • 4 nasturtium flowers

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mix the quark and yogurt together well. Wash the lime, grate half of the zest, and stir it into the quark. Squeeze the lime and stir about 1 tablespoon of the juice into the quark. Peel the shallot, chop it very finely, and stir it into the quark. Wash the nasturtium leaves, cut them into fine, short strips, and stir them into the quark. Stir the saffron into the quark and season with salt and pepper. Roughly tear the nasturtium flowers and fold them loosely into the quark.
