Ingredients for 6 servings:
- 50 g mustard seeds, yellow
- 25 g mustard seeds, brown
- 50 g olives, black with stones
- 1 pinch(s) allspice
- 1 pinch(s) cumin
- 1 pair of fennel seeds
- ½ tsp thyme
- ½ tsp rosemary
- 1 tbsp maple syrup
- 125 ml apple cider vinegar
- 75 ml rosé wine
- 4 cl pastis
Instructions
Working time approx. 10 minutes; Rest period approx. 15 days; Total time approx. 15 days 10 minutes
Pit the olives and discard the stones. Combine all ingredients. Blend with a hand blender until smooth. Let stand overnight, ideally. Then pour into jars and let rest for 2 weeks to enhance the flavor!
