Mustard with olives and pastis

Ingredients for 6 servings:

  • 50 g mustard seeds, yellow
  • 25 g mustard seeds, brown
  • 50 g olives, black with stones
  • 1 pinch(s) allspice
  • 1 pinch(s) cumin
  • 1 pair of fennel seeds
  • ½ tsp thyme
  • ½ tsp rosemary
  • 1 tbsp maple syrup
  • 125 ml apple cider vinegar
  • 75 ml rosé wine
  • 4 cl pastis

Instructions

Working time approx. 10 minutes; Rest period approx. 15 days; Total time approx. 15 days 10 minutes

Pit the olives and discard the stones. Combine all ingredients. Blend with a hand blender until smooth. Let stand overnight, ideally. Then pour into jars and let rest for 2 weeks to enhance the flavor!
