Ingredients for 4 servings:
- 8 eggs
- 150 g bacon
- some olive oil
- 400 g tomatoes, peeled, quartered
- 2 medium-sized onions, very finely chopped
- 2 peppers, halved, pitted, cut into fine strips
- 2 small zucchini, diced
- Thyme finely chopped
- Parsley, flat-leaf, finely chopped
- Tarragon, finely chopped
- Salt
- Black pepper, freshly ground
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes
Herb Omelette
Heat the olive oil in a large pan and fry the bacon. Add the tomatoes, onions, chili peppers, and zucchini and sauté for 10-15 minutes. Beat the eggs, season with salt and pepper, and add them to the pan. Let them set. Serve sprinkled with herbs. Serve with white bread.
