Ingredients for 1 servings:

  • 500 g wholemeal spelt flour
  • 30 g yeast
  • 1 tsp salt
  • 2 pinches of sugar
  • 1 tsp, heaped dried herbs, e.g. thyme, pizza herbs, herbs of Provence
  • 250 ml water, lukewarm

Instructions

Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes

Place the flour and dried herbs of your choice in a large bowl and make a well in the middle. Crumble the yeast into it and mix it with the sugar. Sprinkle salt around the edge. Dissolve the yeast and sugar in a little warm water, cover, and let rise in a warm place. Then knead it with the remaining flour and water until you have a smooth dough. The more thoroughly you knead the dough, the better the end result will be. Then cover and let rise in a warm place until it has doubled in size. Knead the dough again and take small portions, about half a handful, and roll them into a snake-like shape, then wrap them tightly around a barkless wooden stick. Then hold it over the wood fire until the stick bread is cooked.
