Herbal egg in a glass

Ingredients for 4 servings:

  • 4 eggs, hard-boiled
  • 3 tbsp low-fat curd cheese
  • 2 tbsp mayonnaise
  • 2 tbsp basil, finely chopped
  • some black pepper, freshly ground
  • some salt
  • 4 slices of bacon
  • 8 tbsp herbs, coarsely chopped
  • 2 tbsp dressing (salad dressing)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Peel the eggs and cut off about a third of the tops. Remove the yolks from the eggs and mix well with the quark, mayo, and basil, then season. Divide the herbs—e.g., flat-leaf parsley, chervil, or basil—among 4 glasses, drizzle with the dressing, and place the egg lids on top. Place the eggs on top and fill with the filling. Fry the bacon slices until not too crispy and place them on the rim of the glasses as a garnish.
