- 1 Pc. Onion
- 350 g Potatoes
- 250 ml Cream
- 1 shot White wine
- 1 shot Oil
- 1 tbsp Sugar
- 1 l Vegetable broth
- 100 g Fresh spinach
- 100 g Herbs
- First chop the onion, peel and chop the potatoes, chop the herbs and blanch the spinach.
- Then sweat the onions in oil, add the sugar and let them caramelize.
- Deglaze with the white wine, add the potatoes and vegetable stock and cook the potatoes until soft.
- Add the cream and lemon zest, puree everything.
- Just before serving, add the herbs and puree them finely.
