Ingredients for 8 servings:

  • 500 g potato(s), waxy
  • 500 g apples, peeled and pitted weighed
  • 500 g meat sausage
  • 250 g gherkins
  • 12 salted herring (fillets)
  • 500 ml mayonnaise
  • 4 tbsp mustard
  • 1 tbsp lemon juice, to taste

Instructions

Working time approx. 1 hour; Rest period approx. 2 days; Cooking/baking time approx. 20 minutes; Total time approx. 2 days 1 hour 20 minutes

Our Christmas salad for 4 generations

Boil the potatoes one day in advance. Soak the salted herring fillets in water one day in advance, change the water once, and let stand overnight. On the day of preparation, peel the potatoes and cut into smaller cubes. Peel the apples, remove the cores, and also cut into smaller cubes. Cut the sausage and gherkins into smaller cubes. Remove the salted herring fillets from the water, pat dry, and also dice them finely. Mix all ingredients thoroughly and let them sit in the refrigerator for at least one day. Adjust the mustard quantity accordingly. The salad should have a yellowish color.
