Herring salad "Hodgepodge"

Ingredients for 2 servings:

  • 250 g herring fillet(s)
  • 2 eggs
  • 1 apple
  • 1 tsp lemon juice
  • 200 g hunting sausage
  • 100g salami
  • 125 g gherkins
  • 1 onion(s)
  • 75 g Emmental cheese
  • 1 small garlic clove(s)
  • 100 g meat sausage
  • 5 tbsp mayonnaise
  • 3 tbsp natural yogurt
  • 2 tbsp sour cream
  • ½ bunch chives

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 40 minutes

Boil the eggs hard, then chop them into small pieces. Finely dice the herring and apple (you can peel the apple first if you like; I find it better with the skin on). Squeeze a little lemon juice over the apple to prevent it from browning. Finely dice the Jagdwurst, salami, Fleischwurst, gherkins, and cheese. Peel the onion and garlic. Chop the onion and chives, and press the garlic. Combine everything with the remaining ingredients in a bowl, mix thoroughly, and refrigerate overnight. Serve with loosely stuffed sausages—delicious!
