Drain the mandarins, reserving about 140 ml of the juice. Cut the mandarins into small pieces, reserving a few for garnish if desired. Mix the mandarin juice, heavy cream, and liquid sweetener to make a salad dressing. Add the mandarin pieces and let the dressing sit in the refrigerator for 1-2 hours. Add a squeeze of lemon juice, if desired. Trim and wash the Chinese cabbage and cut into 1 cm wide strips. Drain well. Mix the Chinese cabbage with the mandarin salad dressing just before serving. If 300 ml of cream is too much for you, you can also make the salad dressing with cream and milk. However, milk has more carbs! This recipe makes 4 servings, with a total of 1,630 kcal. Per serving: 6.8 g carbs, 3.7 g protein, 408 kcal.
