Ingredients for 5 servings:
- 4 fish fillets (matjes)
- 2 eggs
- 1 onion(s)
- 1 gherkin(s)
- 1 bunch dill, fresh
- Pepper, freshly ground
Instructions

Briefly soak the matjes fillet in cold water. Then dry and cut into small pieces. In the meantime, hard-boil the eggs and then rinse them in cold water. Once cooled, cut them into small cubes. Peel the onion and dice them together with the gherkin. Mix all ingredients together and season with freshly ground pepper. If the herring is too dry, add a little of the gherkin liquid – just a little, of course. Rinse the dill and shake dry. Then finely chop and sprinkle over the herring. Tip: This also works with salted herring. In this case, however, it is important to note that the herring must be soaked in water for at least overnight, changing the water once or twice. Then fillet the salted herring and also cut into small pieces.
