Herring salad with apple

Ingredients for 4 servings:

  • 8 fish fillets (herring fillets)
  • 2 apples, red
  • 1 onion(s), large
  • 2 gherkins
  • 6 tbsp oil (linseed oil)
  • 2 tbsp vinegar
  • 4 tbsp cream
  • pepper
  • Sugar
  • 1 bunch of chives
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the apples, quarter them, remove the cores, and dice the flesh. Peel and dice the onion. Dice the gherkins. Rinse the herring fillets with cold water, pat dry, and cut into approximately 1 cm wide strips. Mix in a bowl with the apples, onions, and gherkins. Blend the cream, vinegar, and linseed oil into a sauce, season with salt, pepper, and sugar, and stir into the salad. Wash the chives, spin dry, and cut into small coils. Sprinkle the chives over the salad. Serve with boiled potatoes.
