Herring salad with shrimps

Ingredients for 4 servings:

  • 400 g herring fillet(s)
  • 200 g shrimp
  • 1 stalk(s) Celery
  • 1 small cucumber(s) (country cucumber)
  • 1 onion(s), red
  • 200 g cream yogurt
  • 1 ½ tbsp lemon juice
  • 2 tbsp honey, liquid
  • Salad herbs, as desired
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Rostock style

Cut the herring fillets into fine, bite-sized pieces. Remove the tougher strands from the celery, halve it, and cut it into fine strips. Wash the cucumber in hot water, dry it, halve it, and scoop out the insides with a teaspoon. Cut the flesh into fine strips. Finely dice the onion. Rinse the shrimp briefly under cold water, if necessary. Place the herring bites, shrimp, onion, celery, and cucumber in a bowl. For the marinade, mix all the ingredients together well and season with pepper and salt. Then pour it over the salad ingredients and mix well. Let the salad marinate in the refrigerator for at least 2 hours before serving. It goes well with some nice country bread, but also with boiled or baked potatoes.
