Herta's garlic chicken

Ingredients for 4 servings:

  • 1 chicken, ready to roast or 8 chicken legs
  • 1 bulb(s) garlic
  • 125 g butter
  • 350 ml white wine (Riesling)
  • Parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 45 minutes

Cut the washed chicken into 8 pieces. Rub with the crushed garlic. This should soak in for a few hours. Melt the butter in a large pot, but do not brown it. Do not overheat. Add the chicken pieces and gently fry for a while (the garlic should not be light brown at most—it will become bitter if it turns dark). Season lightly with salt and pepper, and pour in the white wine. The meat should not be completely covered. After 10 minutes, add the chopped parsley and simmer until the pieces are tender. This goes best with baguette or rice.
