protein-rich mug cake

Combine the instant flakes, protein powder, cocoa powder, baking powder, flavor powder, and sweetener (if desired) in a bowl. Add the protein pudding and milk and mix well. The mixture should have a thick, creamy consistency. Lightly grease both cups (use a larger cup so the lava cake doesn’t overflow) with low-fat margarine and sprinkle the inside of the cups with a little cocoa powder to ensure the microwave cake will easily come out of the cups. Spoon a quarter of the batter into each cup and make a well in the center. Add the chopped dark chocolate to the well and cover with the rest of the batter. Microwave the cups on full power for 2-3 minutes. Note: This time may vary depending on the microwave! Turn the lava cake out onto a plate and decorate as desired. I used a little erythritol. Tip: The lava cake also tastes great eating straight from the cup. Nutritional information per Lava Cake: 400 calories 33 g carbohydrates 35 g protein 12 g fat
