Spitzbuben, terrace cookies and whatever else you call these delicious jam-filled Christmas cookies.

Knead the flour, powdered sugar, vanilla sugar, butter, and egg into a smooth dough. Wrap the dough in cling film and refrigerate for about 30 minutes. Roll out the dough to about 1/2 cm thick and then cut out the desired shapes. Stars, hearts, and round, flower-shaped cutters are good options. Use a thimble to cut a hole in the center of every other cookie from each figure couple. Place the cookies on a baking sheet lined with baking paper and bake at 180°C for about 10 minutes. Spread the raspberry jam on the still-warm cookies (the entire cookie from the figure couple) and place the other half on top. If you like, you can also use a different jam, such as apricot jam or blackcurrant jelly. Dust the still-warm cookies with powdered sugar.
