Ingredients for 4 servings:

  • 800 g potatoes, waxy
  • 1 stalk(s) leek
  • 3 bell peppers (e.g. red, yellow, orange)
  • Salt
  • pepper
  • 200 g smoked ham, diced
  • 3 m.-large gherkins
  • 4 eggs
  • 4 tbsp oil
  • possibly chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with fried egg

Wash the potatoes, boil them with their skins on, and peel them. Slice the leek into rings. Dice the bell peppers. Fry the potatoes in 3 tablespoons of oil until crispy, add the vegetables, and season with salt and pepper. Briefly fry the ham. Finely dice the cucumbers and sprinkle over the vegetables. Fry the eggs in the remaining oil until fried. Divide the potato pan among 4 plates, top each with a fried egg, and garnish with chives, if desired.
