The perfect home bread recipe with a picture and simple step-by-step instructions.
- 500 g Whole rye grains
- 500 g Whole wheat grains
- 500 g Homemade sourdough
- 850 ml Water
- 40 g Yeast fresh
- 1 tsp Honey
- 1 tbsp Cold pressed olive oil
- 2,5 tsp Salt
- 2 tsp Cumin powder
- 2 tsp Garam masala
- 2 Tl Coriander powder
- Oatmeal
- Butter / margarine
- Finely grind the grain. Freshly ground grain tastes and smells incomparably good.
- Dissolve the yeast and honey in 100 ml of lukewarm water until the yeast goes. Dissolve the spices, salt and oil in the remaining water. Spice mix is optional. Mix the tomato sauce from the day before into the dough, add a few olives and your bread will have a hearty Mediterranean flavor.
- Put the flour in a bowl and make a well in the middle. Now put the sourdough in the trough and the like. give liquid yeast. Rinse the sourdough bowl well with the remaining water and add to the flour. This is how v. Nothing is lost to the good, homemade sourdough.
- Now work the dough by hand for 10 minutes. Knead outside inwards until a firm dough has developed. But he mustn’t pull any strings otherwise the bread will crumble later. Kneading is best done by hand.
- Cover the dough and leave to rise covered for 1 hour.
- Knead again by hand for 5-6 minutes and cover again for 1 hour, leave to rise in a warm place.
- In the meantime, smear the loaf pan with butter and sprinkle with oat flakes. With butter the bread goes later like v. even out of shape. Vegans can use margarine. – Preheat the oven after 45 minutes.
- The dough after the 2; knead again for 30 seconds and fill into the prepared loaf pan. Make a cut in the middle of the length after 1.5 cm.
- Bake the bread on the lower rack. Baking time varies depending on the oven. My ancient gas stove takes 2 hours, a modern one can do it faster. Knock test helpful! Chopsticks test too.
- I highly recommend using homemade sourdough. He has great driving force and taste. Liquid sourdough from the organic shop also works, but you then have to adjust the amount of liquid in the water. There are 300 ml of water in 500 g of my sourdough.
- Last but not least: To avoid the exorbitant prices in the health food store, I order my grain online, directly from Farmers. Or cycle to the farmer’s country by bike on the weekend. You can save 60-70% as a result – is a matter of negotiation.
