Homemade Apple Strudel on Amaretto Vanilla Cream with Berries

  • 2 packet Vanilla sugar
  • 1 shot White wine
  • 50 g Butter
  • 50 g Sugar
  • 250 ml Cream
  • 2 Pc. Vanilla pod

  • 4 Pc. Egg yolk
  • 5 cl Amaretto
  • Puff pastry
  • Breadcrumbs
  • 0,25 liter Milk
  1. Take the apples, peel them and cut them in half. You can remove the core of the apple with a knife. Now cut about 1cm. thick slices.
  2. Put a saucepan on top and set the highest level. Put the sugar in the saucepan and let it caramelize slightly. Then they add the apples and stir gently. Now add the butter and wait until it has dissolved. The whole thing is now extinguished with a dash of white wine.
  3. The raisins that you are now adding must be soaked in the amaretto approx. 2 hours beforehand. Now stir the raisins and chopped almonds into the mixture without roasting.
  4. Please let the mixture get cold, otherwise the dough will dissolve. You are now rolling out the puff pastry. Brush about a quarter of the batter with melted butter.
  5. Now sprinkle breadcrumbs on the coated butter. That later gives the bond with the apple. Now apply the cold mass to the dough. Please start where the butter is applied with the breadcrumbs. When you have now generously distributed the mass horizontally, leave about 5 cm free on the right and left so that you can close the roll later.

Custard:

  1. Put 1/4 liter of milk in a saucepan. Heat the milk so that it does not boil. Now take the 2 vanilla pods, cut them open and scrape out the pulp. Please add the pith and pods to the milk and boil the pods.
  2. Now take a bowl and separate 4 eggs. Mix the egg yolk with 2 bags of vanilla sugar. Now add the cream to the eggs and stir until smooth. Please get the pods out of the milk again. Now add the egg-cream mixture to the milk.
  3. Now cook everything slowly. Please add the desired sweetness of sugar yourself. With a little starch dissolved in milk or water, they bind the whole thing.
