Homemade egg salad

Ingredients for 4 servings:

  • 3 eggs, hard-boiled
  • 1 large pickled gherkin(s) or wild garlic gherkin
  • 1 tsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 pinch(s) salt and black pepper
  • ½ bunch chives
  • 1 tbsp, heaped mayonnaise, e.g. E.g. Miracel Whip

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the cooled and peeled eggs into small cubes. Cut the cucumber into smaller cubes. Wash the chives and cut them into small strips, about 0.5 cm thick. Place everything in a small bowl, add the remaining ingredients, and mix well until the salad is a nice golden color. Finally, season well with salt and pepper.
