Ingredients for 4 servings:

  • 300 g flour
  • ½ tsp salt
  • 1 tsp olive oil
  • 3 eggs

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Pasta dough for wide or semi-wide pasta, prepared in a food processor.

Insert the blade into the food processor (important!). Add the flour and salt to the food processor. Whisk the eggs and olive oil together in a small bowl. Set the food processor to speed 2 and add the egg and olive oil mixture. Process the whole mixture for 4 minutes. Form the pasta dough into a ball, wrap it in plastic wrap and place it in the fridge for one hour. After one hour, divide the dough into several portions as needed (e.g. into thirds or quarters). Roll out each portion thinly with a rolling pin and then cut into strips (you can also make farfalle from it if desired). Now cook the pasta in boiling water until it has the desired firmness.
