Homemade Pasta with Spinach and Tomatoes

The perfect homemade pasta with spinach and tomatoes recipe with a picture and simple step-by-step instructions.

Pasta

  • 300 g Durum wheat semolina
  • 3 Pc. Eggs
  • 3 tbsp Olive oil

Sauce with the pasta

  • 1 Pc. Onion
  • 1 Pc. Clove of garlic
  • 500 g Spinach
  • 500 g Filleted tomatoes
  • White wine
  • Cream
  • Lemon zest
  • Nutmeg

Pasta

  1. Mix all ingredients well and knead vigorously. Let rest in the refrigerator for about 1 hour. Make pasta with the pasta machine or by hand. Cook al dente in strong salted water.

sauce

  1. Finely dice the onion and garlic and sauté lightly in the pan. Add the cleaned and washed spinach and let it collapse. Add the tomato pieces and let them steep briefly.
  2. Deglaze with white wine and pour over cream. Season to taste with nutmeg, salt, pepper and grated lemon zest. Pour everything over the hot pasta, sprinkle with Parmesan, sprinkle with roasted pine nuts.
