Homemade soup seasoning

Ingredients for 4 servings:

  • 2 carrots
  • ½ celeriac
  • 3 cloves garlic
  • 3 handfuls of lovage
  • 2 handfuls of celery leaves
  • 3 tbsp salt
  • 6 tbsp oil, good quality, possibly rapeseed oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First I blended carrots, celery and garlic with 1 tbsp salt and 2-3 tbsp oil. First I cut them into very small cubes. (A hand blender should work too) Put the mixture in a bowl and then blended the finely chopped greens with 3-4 tbsp oil and more salt. I used good quality rapeseed oil. You can see for yourself how much oil you need; it shouldn’t be too dry, but not too much either. Blend the two mixtures together and fill into small jars. The salt makes it last a long time. I did put it in the fridge, though. I also use the spice for salad dressings. A small spoonful is enough.
