Ingredients for 1 servings:
- 250 g butter, room temperature
- 30 g truffles, black (or more)
- 1 tsp sea salt
- possibly lemon juice
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely chop the cleaned truffles and then grind them in a mortar and pestle. Cream the butter until fluffy, add the salt and truffles, and continue beating until the butter appears almost white. Pour the finished butter into a jar and store it in the refrigerator. I put some of the truffle butter in an ice cube tray and froze it. This way, you always have a small supply ready to use. Truffle butter goes very well with pasta, salmon fillets, meat, and scrambled eggs. Use it to build up delicate truffle sauces or simply spread it on a fresh baguette.
