Honey-feta pies

Ingredients for 20 servings:

  • 450 g puff pastry (frozen)
  • 100 g feta cheese
  • 50 g honey
  • ¾ tsp mint, dried
  • 2 eggs
  • 40 g pistachios

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the puff pastry sheets side by side on a work surface according to the package instructions and let it thaw at room temperature. Soak the feta cheese in cold water for 60 minutes to desalt it. Drain the cheese, chop very finely and mix with the honey, mint and one egg. Roll out the dough into a sheet about 3 mm thick and cut into 8 cm pieces using a pastry knife. Spread the filling over the pieces of dough. Separate the remaining egg. Brush the edges of the pieces of dough with egg white and fold them together to form a triangle. Press the edges together with a fork. Brush the dough triangles with egg yolk and sprinkle with the chopped pistachios. Bake the pies in the preheated oven on the middle rack at 22 – 225°C for about 10 – 15 minutes. Serve cold or warm.
