Ingredients for 2 servings:
- 500 g chicken wings
- 1 small jar of olive oil (approx. 100 – 125 ml)
- 1 tsp mustard seeds, crushed
- 1 class jar of whiskey (approx. 100 – 125 ml)
- 2 tsp curry powder
- 4 tbsp, heaped mustard
- 2 tsp chili flakes
- 3 tsp tarragon
- 1 tbsp honey
- salt and pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 45 minutes
With honey and mustard sauce
For the marinade, combine olive oil, crushed mustard seeds, whiskey, curry powder, and a pinch of salt in a bowl, mix everything together, and stir well. Add the chicken wings to the marinade and refrigerate for at least 2 hours. For the sauce, mix the mustard with chili flakes, tarragon, and honey. Season with salt and pepper. Remove the chicken wings from the marinade and grill them on a hot grill for at least 8 minutes per side. This will vary depending on the heat of the grill and the thickness of the chicken wings. You’ll need to be careful not to overcook them, but also not to overcook them. After the initial grilling, remove the wings from the grill and let them rest in the sauce for 2-3 minutes.
