Ingredients for 4 servings:

  • 4 egg yolks
  • 50 g powdered sugar
  • 3 tbsp honey, good
  • 200 ml cream
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Beat the egg yolks and powdered sugar in a double boiler until the mixture is hot, very thick, and light in color. Stir in the honey and a pinch of salt. Place the mixture in a bowl of iced water and whisk until cold again. Fold in the stiffly whipped cream. Pour the mixture into a loaf pan and place in the freezer. Refrigerate for 15 minutes before serving. Turn the parfait out, cut into finger-thick slices, and arrange on dessert plates, perhaps with a little cream and chocolate syrup.
