Honey Sesame Rabbit on Apple and Lentil Salad

The perfect honey sesame rabbit on apple and lentil salad recipe with a picture and simple step-by-step instructions.

  • 150 g Lentils red
  • 250 g Mixed salad
  • 2,5 tbsp Passion fruit vinegar
  • 2,5 tbsp Cranberry vinegar
  • 2,5 tsp Mustard coarse
  • Sea-Salt
  • Pepper
  • 10 tbsp Hazelnut oil
  • 5 tbsp Salad oil
  • 5 tbsp Sour cream
  • 5 Pc. Rabbit fillet
  • 5 tsp Curry
  • 5 Pc. Apple Elstar
  • 75 g Roasted pine nuts
  • 5 tbsp Sesame black
  • 1 tbsp Sesame seeds white
  • 3 tbsp Honey
  1. Preheat the oven to 80 degrees. Rinse the lentils in a sieve and cook in boiling salted water for 5-7 minutes, quench and drain.
  2. Sort the salad, wash it and spin dry. Mix vinegar, 5 tbsp water, mustard, salt and pepper with a whisk. First mix in the oils, then stir in the sour cream.
  3. Season the meat with salt. Fry the meat 5 tablespoons of hot oil all around for approx. 6 minutes until golden brown. Caramelize honey in the same pan, pour sesame seeds over it and then place the rabbit on an oven rack and let it rest in the oven for 5 minutes.
  4. Quarter the apple unpeeled, remove the core and cut lengthways into thin slices. Put the lettuce, apple, lentils, and pine nuts in a large bowl, pour the dressing over it, mix everything together and arrange on a deep plate. Carve the fillets and place them on top. Drizzle with the honey stock from the pan.
